Cuddihy, J.A. Jr. and Day, D.F.  1999.  Dextran can cause severe economic losses. Not only is sugar lost due to dextran formation but dextran itself causes processing problems. Increased juice viscosity, poor clarification and crystal elongation are all associated with the presence of dextran.
