The Effect of Yeast Population on Alcohol Production

Fandialan, J.C. and Angeles, A.T. 1982.  The effect of population density on alcohol production is determined. A 24-hour old culture of Saccharomyces cereviseae yeast with cell density having 10% transmittance was serially diluted up to 1010 to vary the cell density. One ml from each of the series was inoculated to 200ml sterile molasses mash and fermented until a constant brix was obtained. PROCEEDINGS OF THE PHILIPPINE SUGAR TECHNOLOGISTS. August:  182-187.
