The Displacement Method of Extracting Sucrose from Cane

Payne, J.H.  1967.  The simplest and most efficient extraction of isolating the juice from fiber was not by the application of compressive force of squeezing or pressing, such as a mill or other type of press, but displacement of juice with water, erroneously called diffusion. Displacement of juice is best achieved by a counter-current of water and fiber-juice in which water moves as an advancing front. The Displacement Method of Extracting Sucrose from Cane.
