Sucrose Confectionery

     Gregorio, B.S., Gumera, R.S., et.al. 1999.   Production of rock sugar and rock sugar swizzle sticks was studied and evaluated through a series of experiments using both raw and refined sugars. These confectioneries were made up of large sucrose crystals. Rock sugar and rock sugar swizzle sticks distributed in the Philippines are imported and used as gift, coffee/tea sweetener, cake décor and in flower arrangement.
