Ziegler, J.G. 1977. Wet-ground fondant sugar has proved to be a convenient and reliable technique for establishing seed in vacuum pans. Even theoretically it cannot be, or does not need to be a precise operation. Initial formation of good clean grain at the start of a strike is one of the requirements in sugar boiling and the use of wet ground fondant seems to be superior to less sophisticated techniques.
