Optimum Temperature Range of a Thermophilic Lambanog Yeast Strain for High Efficiency Alcoholic Fermentation of Molasses

Samaniego, R.L. and Olan, E.S. 1980.  Fermentation process for the production of ethyl alcohol is exothermic, yet the yeast involved in the process is mesophilic. An isolate from lambanog was found to tolerate high temperature. About 82% fermentation efficiency was attained at 35-37oC. PROCEEDINGS OF THE PHILIPPINE SUGAR TECHNOLOGISTS. August: 174-180.
