Observations on the Occurrence and Nature of Polysaccharides in Sugarcane

Hidi, P., Keniry, J.S., et.al.  1976.  Brief discussion is presented of the effects of the polysaccharide, dextran, on raw sugar manufacture and refining and of the procedures most commonly used to estimate the extent of dextran in cane juices, process materials and raw sugar. Modifications to the dextran haze assay of Nicholson and Horsley in which dextran was determined as the haze developed by 50% ethanol in a starch-free and protein-free solution of the material, are described with particular reference to method specificity.
