Upadhiaya, U.C.  1987.  Deterioration, whether in the field or factory, decreases extraction and increases viscosity and thereby lowers the through put rates, while also producing color and acid forming compounds which requires extra lime addition to neutralize the acidity. All of these non-sucrose compounds must be removed in processing as these have melassigenic effect, that is, they carry sucrose with them to molasses, thereby decreasing the amount of recoverable sugar.
