Scwengers, D., Benecke, H., et.al.  1990.  Pfeifer & Langen has been a producer of dextran since 1950. Dextran finds its main application as a blood plasma expanding agent in the form of aqueous infusion solutions. This paper discusses the fundamentals of dextran formation, its enzymatic production, the formation of leucrose, which is a by-product in the synthesis of dextran, the properties of leucrose and its possible application in foods and as a chemical building block.
