Inversion Losses in Dorr Clarifiers

     Suerte, D. and Robles, R. 1965.  Periodic analysis of the juice during shutdown shows that the average loss of sucrose in clarified juice due to inversion was 7.4% in 8 hours and that clarification process has a complete sterilizing effect on microorganisms.
