Incremental Technique of Fermentation Using Bagasse Ash instead of Sulfuric Acid

     Batenga, D.E. 1954.  The addition of sulfuric acid in wort preparations to adjust the pH is a conventional practice in all distilleries in the Islands but the acid can be substituted by sifted bagasse ash, using incremental technique of fermentation.
