Effect of Sulfitation on the Refining Quality of Raw Sugar

Dr. Chi Chou, C.  1984.  A laboratory experiment was designed to determine the effect of “sulfitation” on decolorization performance. As is well known, the most important reason for sulfitation is its bleaching action which usually is not permanent as far as the product color is concerned, particularly after exposure to air.
