Conditioning Powdered Sugar

Nahler, D.  1977.  The large surface area of the sugar, combined with the high solubility of sucrose in water, strongly affects its storage properties. Even though the packaging materials contain a moisture-barrier layer, powdered sugar still hardens or forms lumps.
