Copyn, J.J. 1929.   Cane has two important pigments, Chlorophyl and Anthocyan. Chlorophyl is insoluble in water and will be taken out together with the press cake while Anthocyan is a violet-colored substance, soluble in water and therefore the syrup of dark-colored cane will be darker than that of varieties with light colored rind.
